With the end of summer officially here, I thought it appropriate to raise a glass and toast to a season of fun, family, adventure and learning.
And what better way to celebrate than with a mojito!
I’ve entertained a few times this summer, and the “mom a la mode mojito” has made quite the splash with my guests. I use fresh mint from my garden, and substitute flavored seltzer in place of tonic/club for an added surprise. Recipe is below. Enjoy and Cheers!

I make these individually but I’m sure you could triple or quadruple the recipe and make a pitcher. Let me know how it goes if you do!
Ingredients: per drink
3 wedges fresh lime
1 teaspoon super fine sugar
1 shot of premium rum
10 (or so) fresh mint leaves, torn up
ice
flavored seltzer (I like raspberry lime – it really enhances the fresh lime flavor – but you can also try blueberry pomegranate or something else fun and festive)
swizzle stick
Steps:
Prep ahead of time by making a little drink station if you are going to make these individually for each guest. I like to serve them in 12 oz. clear plastic tumbler cups and with a thin flexi-straw (so guests can sip without getting mint leaves stuck in their teeth.)
Start by tearing your mint leaves and add them to bottom of glass. Add the shot of rum, followed by the superfine sugar. Use the swizzle stick to really mix things well so the sugar doesn’t clump. Squeeze in your lime and add one or two small pieces to the glass for garnish (and extra flavor). Add ice and top off with flavored seltzer, again, using the swizzle stick to stir everything together.
Serve with a thin flexi-straw and enjoy!
